orange and date scones



we have been making these scones for about 5 years now and this flavour combo never gets boring.

makes 15 large scones

1100gm plain flour
100gm sugar
50gm baking powder

100gm butter - soft
2 oranges
1 cup pitted and diced dates

500ml cream
500ml whole milk

-sieve flour and baking powder into large bowl and mix in sugar.
-add zest of 1 orange, dates and then rub the butter in with your hands.
-once butter is thoroughly mixed through make a well and pour in cream and milk.
-mix well and about 5 or 6 times
-scrape onto large greased tray and moisten hands with water then shape into a wide brick shape - about 20cm long x 15cm wide x 5cm high
-egg wash the whole of the top and with a knife cut into 5 x 3 (=15 pc) squares
-bake at around 180c for 20 - 25 min
-as soon as scones come out of the oven push them together and zest the remaining orange all over the top so that the oil falls over the hot scones.
-dust with icing sugar to finish
